Arba Minch University Researcher's Decade of Work Aims to Bring Enset From the Lab to Wider Markets

A researcher at Arba Minch University has spent more than a decade on research and innovation aimed at taking enset, one of Ethiopia's most important indigenous food crops, from the laboratory to international markets, according to a report in the Amharic edition of The Reporter.

The report, whose title translates as "Enset: From the Laboratory to International Recognition," says the work has centered on adding value to the crop so that a wider range of enset-based foods can reach consumers. The researcher has worked with university colleagues and with private and government institutions, the newspaper said.

A staple with untapped potential

Enset (Ensete ventricosum) is often called the "false banana" because it resembles the banana plant. It is a staple or co-staple food for an estimated 20 million people, mainly in Ethiopia's southern and southwestern highlands. Unlike the banana, it is grown not for its fruit but for the starch stored in its corm and pseudostem.

The plant is processed into several traditional foods, including:

• Kocho, a fermented product made from the scraped pulp of the pseudostem and the grated corm, used to make flatbread and other dishes;
• Bulla, a fine starch extracted from the pulp and used in porridges and drinks;
• Amicho, the boiled corm, eaten much like other root and tuber crops.

Agricultural researchers have long described enset as a food-security crop. It is considered relatively drought-tolerant, can be harvested at different stages of growth, and can be stored for long periods once fermented. Many households keep standing enset plants as a reserve for times when other harvests fail.

Barriers to commercialization

Despite these strengths, enset remains largely a subsistence crop. Traditional processing is labor-intensive and is typically carried out by women using hand tools, and fermenting kocho can take weeks or months. Variations in hygiene, moisture content and shelf life have made it difficult to package enset products for urban retailers, let alone for export.

Researchers and development practitioners have identified improved processing technologies, standardized products and better packaging as important steps toward opening new markets. Value addition of the kind described in The Reporter's account is seen by many in the sector as a way to raise incomes for enset-growing households and to introduce the crop to consumers outside its traditional growing areas.

Role of universities

Arba Minch University, in southern Ethiopia near major enset-producing communities, is one of several Ethiopian higher-education institutions that have researched the crop. University-based enset research has covered disease management, particularly bacterial wilt, a major threat to plantations, as well as processing, nutrition and product development.

The Reporter presents the Arba Minch effort as an example of how sustained research, combined with partnerships between academia, industry and government, can bring an indigenous crop to new audiences. Building a stable, export-ready supply chain, however, generally depends on investment in processing facilities, quality certification and market access.
